Aloha Yams

A tropical inspired side dish--purple yams with coconut baked in a sweet, creamy sauce.
Ingredients
- 3 medium purple Hawaiian yams, peeled and sliced 1/8 inch thick
- 2 tablespoons butter
- 1 medium sweet onion, diced
- 1 can coconut milk
- 1/2 cup heavy cream
- 1 cup toasted, shredded coconut
- Salt and pepper to taste

Method
In a large cast iron skillet or paella pan, saute onion in butter until slightly caramelized. Layer yams into pan. Pour in coconut milk and cream. Add more milk and cream, if needed, until yams are just covered. Bring to a simmer. Cook until yams are tender. Salt and pepper to taste. Top with coconut. Place in a 350 degree oven until brown and bubbly around edges.
Notes: Purple yams hold up to this recipe best because of their firmer texture, but it can be made with any type of sweet potato or yam. This side dish is super for tropical themed parties. The milk will turn purple from the yams. Kids love it.
