Anytime Omelet

This is an easy and nutritious meal for breakfast, lunch or dinner.
Ingredients
- 3 tablespoons olive oil
- 1/4 cup chopped shallots or onions
- 3 generous cups fresh baby spinach leaves
- 6 eggs, beaten
- 1/4 tsp salt
- 1/8 tsp cayenne pepper
- 1/2 cup crumbled tomato basil feta cheese
- 1/4 cup sweet chili sauce
- Garnish:
- Lettuce and tomatoes

Method
Heat olive oil in medium skillet over medium heat. Add shallots and cook until transparent and just slightly browned. Cover shallots with spinach and stir blending shallots with spinach leaves. Let spinach cook until leaves wilt but remain firm, 1-2 minutes. Beat eggs with seasonings and pour over spinach mixture, tilting skillet until eggs are evenly spread in pan. Sprinkle cheese over eggs, cover and cook over medium low heat until eggs are done and cheese has softened, approximately five minutes. Spread chili sauce over omelet and cut into four sections. Line four plates with one piece of leaf lettuce with a tomato slice topping with section of omelet.
