Apple-Blueberry Breakfast

Apple chunks, cinnamon & butterscotch schnapps are topped with layers of pecans, frozen blueberries, and a layer of Kashi cereal & more schnapps.
Ingredients
- 3 medium tart apples
- 1/2 teaspoon + 1/2 teaspoon Cinnamon
- 1/4 cup butterscotch schnapps, divided (1/8 cup or 2 tbsp. for each)
- 3 tablespoons whole wheat flour
- 1 teaspoon + 1 tablespoon Splenda
- brown sugar mix
- 1/2 cup chopped pecans
- 1 1/2 cups frozen blueberries
- 1/2 stick (1/4 cup) butter
- 3 packets Kashi Hot Cereal (Hearty Honey and Cinnamon)
- 1/8 teaspoon Nutmeg

Method
1. Spray a 9" square baking dish with a nonstick spray like PAM. 2. Peel apples and cut into small chunks. Mix 1/2 teaspoon cinnamon with the apples. 3. Pour 2 tbsp. butterscotch schnapps over apple chunks and mix thoroughly. 4. In a measuring cup, put the 3 tablespoons of whole wheat flour and the 1 teaspoon Splenda brown sugar mix. Blend thoroughly and then mix into apple mixture. Spread evenly in the baking dish. 5. On top of the apple mixture, sprinkle the chopped pecans. 6. On top of the chopped pecans, add the frozen blueberries evenly. 7. In a microwave cup, melt the butter, then add 1 tablespoon of the Splenda Brown Sugar mix and the remaining 1/8 cup (2 tbsp)butterscotch schnapps. 8. In a mixing bowl combine the 3 packets of the Kashi cereal, 1/2 teaspoon cinnamon + 1/8 teaspoon nutmeg. 9. Pour the butter mixture over the Kashi cereal mix and blend thoroughly. This mixture will look something like granola. Spread evenly onto the top of the blueberry layer. 10. Bake at 350 degrees for 50 minutes. Let stand for 5 minutes and serve.
Notes: If you like blueberries and pecans, you can add more to the recipe to taste. The top of this dish gets crunchy while the fruit underneath blends together for a great taste. You can add milk or low fat ice cream to the top and make it a dessert instead of breakfast. You can also use regular brown sugar and eliminate the schnapps or add a little butterscotch flavoring instead.
