Applesauce-Oat Bran Muffins

These healthy muffins use oat bran, flaxseed, unsweetened applesauce, plus raisins and egg product, if desired, and have very little fat.
Ingredients
- 4 cups oat bran
- 1/2 cup flour, any type
- 1/2 ground or whole flaxseed
- 4 tsp baking powder
- 2 to 4 tsp cinnamon
- 4 cups unsweetened applesauce
- 2 eggs, beaten [or 1/2 cup refrigerated or frozen egg product, thawed]
- 2/3 to 1 cup raisins, optional but highly recommended

Mix dry ingredients, except raisins. Mix wet ingredients. Combine both mixtures and raisins, stirring just until combined. Put in 24 greased regular-size muffin tins and bake at 425 degrees about 20 minutes or until done. Muffins should be slightly browned and a toothpick inserted should come out clean.
Notes: Muffins freeze well. Microwave for 20-30 seconds to thaw for a quick treat. Three muffins a day provides the recommended amount of oat bran to help lower cholesterol.
