asparagus and egg fritatta sandwich

A frittata is made from beaten eggs, similar to an omelet. Other vegetables, such as chopped tomatoes or zucchini would work well in this recipe, too.
 

Ingredients

  • 1 lb. fresh asparagus spears
  • 6 beaten eggs
  • 2/3 cup grated Parmesan cheese
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 6 1/2-inch thick slices Italian bread

Method

Cook asparagus in a small amount of boiling water for 10 minutes; drain well. Arrange cooked asparagus in the bottom of a large skillet. Beat together eggs, Parmesan cheese, salt, and pepper; pour over asparagus in skillet. Cook over medium heat. As mixture sets, run a spatula around the edge of the skillet, lifting egg mixture so uncooked portion flows underneath. Cook until set. Cut frittata into 6 wedges. Serve on bread.

 

Notes: You will just love this one. You'll make it at every occassion. It's the best sandwich ever.
