Baby Spinach and Tortellini Salad

Fresh spinach with bell peppers, artichokes, mushrooms and tomatoes--toss with fresh tortellini for a simple, healthy vegetarian dinner or side dish.

  • Servings: 4-6


2 Tbsp Olive Oil
2 Garlic Cloves, crushed
3 Large Bunches Fresh Baby Spinach
1 Bell Pepper, chopped or sliced
1 can Artichoke Hearts In Water, drained
1 Carton Baby Bella Mushrooms, sliced
½ Yellow or White Onion, chopped
½ bunch Cilantro, chopped
2-3 Fresh Tomatoes, quartered
1 pkg Tortellini, spinach filled


Cook tortellini according to package directions and set aside. Place the garlic and olive oil in a wok or large pan and heat until garlic is golden. Add spinach, bell pepper, onion, cilantro, onion, mushrooms and artichoke hearts. Once the spinach has wilted, add tortellini and tomatoes, toss and place in a nice dish. You can add just about any vegetable to this dish you desire.
