Baby Spinach & Tortellini Salad
- Servings: 4-6
|2 Tbsp||Olive Oil|
|2||Garlic Cloves, crushed|
|3||Large Bunches Fresh Baby Spinach|
|1||Bell Pepper, chopped or sliced|
|1 can||Artichoke Hearts In Water, drained|
|1||Carton Baby Bella Mushrooms, sliced|
|½||Yellow or White Onion, chopped|
|½ bunch||Cilantro, chopped|
|2-3||Fresh Tomatoes, quartered|
|1 pkg||Tortellini, spinach filled|
Cook tortellini according to package directions and set aside. Place the garlic and olive oil in a wok or large pan and heat until garlic is golden. Add spinach, bell pepper, onion, cilantro, onion, mushrooms and artichoke hearts. Once the spinach has wilted, add tortellini and tomatoes, toss and place in a nice dish. You can add just about any vegetable to this dish you desire.
Makes for a wonderful healthy meal in minutes.
