Baked French Toast Crunch

Bran cereal, walnuts, and coconut make a sweet and crunchy topper to this breakfast favorite that serves a crowd.
 

Ingredients

  • 1 large loaf Italian Bread
  • 2 cups egg substitute or 12 egg whites
  • 4 cups lowfat or skim milk
  • 2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 stick butter substitute
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 cups crushed bran flake cereal
  • 1 cup chopped walnuts
  • 1/2 cup flaked coconut

Method

Spray large baking pan with non-stick spray. Slice bread into 1-inch-thick slices; arrange flat in prepared pan. In a medium mixing bowl, whisk together the egg substitute, milk, vanilla, and cinnamon. Pour egg mixture over entire pan of bread. Use a wooden spoon to press bread down into milky mixture. Set aside. In a medium saucepan, melt butter substitute; add honey, brown sugar, and cinnamon. Stir until dissolved. Add cereal, nuts, and coconut; mix well. Drop mixture evenly over bread in pan. Bake at 350 degrees about 30 minutes until done (no longer wet).

 

Notes: Since ovens vary, check for doneness with a knife inserted in the middle comes. Serve with berries and syrup.
