Nothing could be simpler than roast beef--just season, bake and carve.

Preheat oven to 425 degrees. Mix pepper, garlic and olive oil in a small bowl. Brush over meat and place in a shallow pan. Roast in ten minutes, reduce heat to 250 degrees, about 60 minutes or until a meat thermometer reads 130 degree for medium rare. Remove from oven and let it rest 15 minutes. Slice thinly with a sharp knife and serve with juices.
Simple, nutritious, and feeds a family of four with leftovers for sandwiches.
