Broccoli Cashew Medley

A colorful broccoli salad with radishes, cashews and a light, creamy dressing.
Ingredients
- 1 bunch fresh broccoli
- 6 radishes, sliced thin
- 1/2 cup cashew pieces
- 3 green onions, chopped
- 1/2 cup reduced fat mayonnaise
- 1/4 cup light sour cream
- 1/4 cup white balsamic vinegar
- 1 tbsp Splenda
- 1/2 tsp kosher salt
- 1/2 tsp fresh ground pepper

Method
Rinse and drain broccoli then cut into spears. In a large mixing bowl, add first 4 ingredients. In a small mixing bowl, whisk together remaining ingredients. Pour dressing over broccoli and mix well. Cover and refrigerate at least 4 hours or overnight.
