Fresh persimmons are diced and cooked, then combined with packaged trail mix, croutons and spices.



Ingredients:

  • 6-8 fresh persimmons
  • 1-15 ounce can cranberry sauce
  • Vanilla, nutmeg, cinammon, and cloves (to taste)
  • 1 regular-size package trail mix (mixed nuts with yogurt and raisins)
  • 1/2 package croutons (non-salted)
  • 1/4 cup brown sugar
  • 1/2 cup melted butter or margarine

Method

Peel and dice persimmons; parboil until semi-tender. Add can of cranberry sauce, vanilla, nutmeg, cinnamon, and cloves (to taste); toss with 1/2 package trail mix. Blend thoroughly and spoon into buttered casserole dish. Mix croutons with melted butter, brown sugar, and remaining 1/2 package trail mix. Sprinkle crouton mixture over persimmon-cranberry mixture. Bake at 325 degrees for 1/2 hour, stirring once.

Notes: Be sure to add the dash of vanilla, nutmeg, cinnamon, and cloves to taste to the persimmon-cranberry mixture before tossing with 1/2 package trail mix.
