Chicken in Mushroom Wine Sauce

Boneless, skinless chicken thighs are moist and tender when baked in a creamy sauce flavored with herbs, garlic and sun dried tomatoes.
 

Ingredients

  • 4-6 whole chicken thigh quarters
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 large onion, chopped
  • 1 garlic bulb, smashed and finely diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/4 tsp rosemary
  • 1 small can sun dried tomatoes, chopped
  • 1 chicken bouillon cube, smashed and dissolved in 1/2 cup white wine
  • Zest of 1/2 lemon or lime

Method

Dissolve bouillon in wine. Mix all other ingredients together, except chicken, then pour sauce evenly over chicken. Cover with foil and bake in a 400 degree oven for 1 hour. Serve with fresh steamed vegetables and yellow rice. Use sauce to pour over rice.

 

Notes: This is a very versatile recipe and can be changed by adding a layer of stuffing to the top, or cheese and bread crumbs.
