Low fat pork and extra veggies, quickly sauteed and served with a healthy, seasoned sauce over brown rice.
In large skillet heat canola oil, add pork, celery, green onion, and red bell pepper. Cook and stir until onion is soft. Add soy sauce, chicken broth, mushrooms, oriental vegetables and ground ginger. Cover and simmer five minutes. In small bowl mix 1/4 cup chicken broth with cornstarch and add to skillet. Bring to a boil stirring constantly. Allow to boil one minute or until mixture begins to thicken.
Serve over hot brown rice. Sprinkle each serving with a pinch of flax seed, if desired.
Notes:
I like this recipe because I can control the sodium. The fact that pork is so lean now it makes for a healthy alternative to beef. I sprinkle the flax seed for those who want it--for health benefits as well as flavor.
