Chris' Turkey Casserole

This main dish combines diced cooked turkey, cooked noodles, vegetables, condensed cream soups, sour cream, and cheddar cheese, plus thyme and sage for flavor, and bakes it all together in a casserole.
 

Ingredients

  • 2 cups diced cooked turkey
  • 1 celery Stalk, diced
  • 1 carrot, diced
  • 1 small onion, chopped
  • 1 or 2 cloves of garlic, crushed
  • 1/2 cup sliced mushrooms
  • 2 Tbsp olive oil
  • 8 oz medium noodles (I use whole wheat)
  • 1 can Cream of Mushroom Soup (I use Healthy Choice)
  • 1 can Cream of Chicken Soup (I use Healty Choice)
  • 1/2 cup sour cream (I use fat-free)
  • 1 cup grated cheddar cheese
  • 1/2 tsp ground sage
  • 1 tsp thyme leaves
  • Salt & Pepper to taste
  • Optional: red pepper flakes, cooked fresh green beans or frozen green beans

Method

Saute celery, carrot, onion & garlic in olive oil about 1 minute. (Add red pepper flakes, if desired.) Add mushrooms; saute another minute or until all vegetables are tender. Cook noodles according to the directions on the package. Drain noodles and mix with the vegetables and the remaining ingredients. Mix in green beans, if desired. Bake in a casserole at 350F for 45 minutes.
