Cod Fish Hash

This recipe calls for salted cod and is prepared with red, green and yellow bell peppers. The Marsala and garlic flavor the dish perfectly.
 

Ingredients

  • 2 lbs salted cod fish
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion
  • 1 14 oz canned diced tomatoes seasoned with basil
  • 1 oz Marsala cooking wine
  • 1 large garlic clove
  • 2 bay leaves
  • 1-2 tablespoons olive oil to coat bottom of pan
  • Black pepper to taste

Method

Soak fish overnight. Rinse and add fresh water, boil fish 15-20 minutes, and rinse once more. Set fish aside and slice peppers and onions very fine. Heat olive oil in a large pan, and saute onions and peppers for 5 minutes. Mince garlic and add to pan with bay leaves. Add fish to pan, shredding with hands, and incorporate with remaining ingredients in frying pan. Finally add diced tomatoes, wine and a pinch of black pepper. Stir and let sit a couple of minutes until it dries out a little bit.

 

Notes: If fish is still too salty, after boiling 15-20 minutes, you may repeat the rinsing process once more. If fresh cod fish is used, salt needs to be added to recipe, to taste.
