Colorful Bulgar Pilaf

Bulgar wheat is cooked with canned tomatoes, yellow bell pepper, onion & olive oil in liquid to serve as a side dish instead of rice, potatoes or pasta.
 

Ingredients

  • 1 medium yellow bell pepper, diced
  • 1 medium Burmuda onion, diced
  • 1/4 cup Light Olive Oil
  • 1 14 oz. can whole peeled tomatoes, diced (save juice)
  • 1 1/2 cups water
  • 1 cup of Bulgar wheat
  • Salt to taste
  • Paprika to taste
 
Method

In 2-quart saucepan, over medium heat, saute the bell pepper and onion in the olive oil until soft and slightly browned. Add the diced tomatoes and stir. The leftover tomato juice from the whole tomato may go towards your 1 1/2 cups of water. Make up the difference with water. Add the bulgar and stir everything together. Cover and cook on medium-low heat for 30 minutes. Remove from heat; add salt and paprika to taste; cover and let stand 30 minutes more. Fluff and serve.

 

Notes: This is simple to make, high in nutrition and a flavorful alternative to potatoes, pasta or rice.
