A creamy corn casserole that's light on the stomach. Garnish with green onions to complement.

3 Tbsp Margarine, softened
3 Egg Whites
8 oz Reduced-fat Cream Cheese
½ cup Onion, chopped
½ cup Green Bell Pepper, chopped
1 (15 Ounce) Can Whole-kernal Corn
1 (14 Ounce) Creamed Corn
1 (8 Ounce) Package Corn Muffin Mix
¼ tsp Fresh Ground Pepper
Cooking Spray


1. Preheat oven to 375 degrees F. In a large bowl, combine margarine, egg whites and cream cheese. Add onion, bell pepper,whole-kernal corn and cream-style corn. Stir ingredients until well combined. Stir in muffin mix and black pepper.

2. Coat a 11x7-inch dish with cooking spray and pour in mixture. Bake for 50 minutes. Insert wooden tooth pick at center and see if it comes out clean to test readiness.
