Country Girl in South Florida Greens

Collards (also known as collard greens) are cooked in water, vinegar, and beer, along with onion, garlic, & hot pepper, and plenty of liquid smoke.
 

Ingredients

  • 8 cups Fresh Home Grown Collard greens (or store-bought is okay)
  • 1 can of beer
  • 1 large yellow onion, chopped
  • 3 cloves garlic, chopped
  • 1/4 cup sugar
  • 1/4 cup liquid smoke (or less, to your taste)
  • 1 hot pepper, minced
  • 1 cup apple cider vinegar
  • Water
  • Salt and pepper to taste
 
Method

Put all ingredients into a large pot, except the water. Once on the stove, on medium heat, add water to just cover the greens. Cook for 2 1/2 to 3 hours, turning to low after 1 hour. Season to taste!

 

Notes: Warning... may smell up the whole neighborhood, so expect visitors!
