Creole Catfish Sandwiches


Breaded catfish fillets are baked and then served with a creole mustard sauce and lettuce on a fresh bun--low fat and delicious.



Ingredients:

  • 1 tsp cornstarch
  • 2 tsp lemon juice
  • 1 egg white
  • 1/3 cup bread crumbs
  • 3 tbsp yellow cornmeal
  • 1 tsp creole seasoning
  • 1/4 tsp black pepper
  • 4-4 oz frozen or fresh catfish filets
  • 2 tbsp mayonnaise
  • 2 tsp creole mustard
  • 4 hoagie style buns
  • 4 lettuce leaves

Method

Preheat oven 450 degrees. Preheat cookie sheet for 10 minutes before using. Combine cornstarch, lemon juice, and egg white in bowl. In another bowl combine bread crumbs, yellow cornmeal, creole seasoning and pepper. Dip fish filets in egg mixture then into bread crumb mixture. Place fish on preheated cookie sheet in a single layer. Bake for 25 minutes. While fish bakes, combine mayonnaise and mustard. Spread mixture on one side of bun, place a lettuce leaf on bun and top with fish, and then add top of bun.

Notes: My whole family loves this recipe. I've never told them that it is low fat.
