Cucumber Balsamic Vinaigrette

This dressing for salads & veggies combines finely chopped cucumber with Zesty Italian mix & balsamic vinegar, and is relatively low in oil.
Ingredients
- 1 cucumber, peeled and chopped finely in blender
- 1/4 cup canola oil or olive oil
- One package zesty Italian dressing mix (dry)
- 1 1/2 cups balsamic vinegar
- 1/2 cup water

Method
After chopping cucumber, add oil, dressing mix and Balsamic vinegar to chopped cucumber. Add water. Stir well or shake to blend well. Serve over any greens salad or on fresh steamed brocolli or asparagus.
Notes: Original. Very sweet/sour/zesty. Delicious with a salad of mixed field greens, sundried grape tomatoes, grated carrots, sliced cucumber, feta and parmesan cheeses.
