|¼ cup||Mild-flavored Olive Oil|
|⅓ cup||Maple Syrup, prefer grade b|
|¼ cup||Unsweetened Cocoa Powder|
|3 cups||Rolled Oats, not quick-cooking variety|
|½ cup||Dried Sweetened Cranberries|
|½ cup||Miniature Chocolate Chips|
Preheat to 250 degrees. Line a baking tray with parchment paper. In a large bowl whisk together the olive oil, syrup, and cocoa until a thick slurry forms. Stir in the rolled oats until well coated. Pour the oat mixture onto the baking tray. Spread out, trying to leave some large chunks intact. Bake for 90 minutes or until the oats are toasted. Remove the granola from the tray and place in a large bowl. Fold in the cranberries and miniature chocolate chips. Allow to completely cool.
You may substitute canola oil for the olive oil. If you are using a mild olive oil there will be no noticable olive flavor. In addition, feel free to toss any of your favorite nuts, seeds, or dried fruits into the granola. The chocolate granola is a great base for just about anything. Bagged granola from the store can be super expensive and loaded with ingredients you'd rather not eat. This super simple recipe is not only very affordable, but tasty as well.
