Deer Stir-Fry


Venison strips are stir-fried with carrots, broccoli, sugar snap peas and bell peppers, and served in a hot-and-spicy sauce.



Ingredients:

  • Hot & spicy Szechwan seasoning mix
  • 1 Tbsp sugar
  • 1/4 cup water
  • 1 lb venison roast
  • 2 Tbsp olive oil
  • 1 cup thinly sliced carrots
  • 1 1/2 cups broccoli
  • 1 cup sugar snap peas
  • 1/2 of each green, red & yellow bell peppers, sliced into strips
  • 1 cup thin onion wedges
  • 1, 8 oz can water chestnuts, drained
  • 3 Tbsp soy sauce
  • Crushed red pepper (to taste)
  • Cooked rice, if desired

Method

Combine seasoning mix, sugar & water in bowl; set aside. Cut venison roast into thin strips. Heat wok or skillet with olive oil over medium-high heat. Add and stir-fry venison about 4 minutes; remove. Add sliced carrots and cook for 1 min. Then add broccoli, sugar snap peas, onion, and bell peppers to pan. Add water chestnuts and soy sauce & mix well. Add the seasoning mixture that was set aside; cook over med-high for 15-20 minutes. For hotter taste, add some crushed red pepper.

Notes: Can be served over rice. Prep time is about 45 minutes.
