East West Slaw

A warm broccoli slaw with a tangy Asian inspired dressing.
 

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1/4 cup white balsamic vinegar
  • 1/2 medium red onion, sliced
  • 2 pkg broccoli slaw mix
  • 2 tbsp bean sauce
  • 1 tbsp low sodium soy sauce
  • 1 tbsp Splenda
  • 1/2 tsp red pepper flakes

Method

In a large nonstick saute pan, heat olive oil over medium high heat until oil is rippling. Add onion and cook until tender, but still crunches, 5-7 minutes. Reduce heat, add vinegar and remaining ingredients. Cook another 5 minutes. Vegetables should be al dente.

 

Notes: Great with fish.
