Easter Skillet Turkey Deluxe with Cornbread Dressing Crust and Apple Chutney

Slices of roasted turkey are topped with mashed potatoes and gravy. A corn muffin batter, with sage and sour cream, is poured over all and baked.
 

Ingredients

  • 2 tbsp butter
  • 1 cup celery, finely chopped
  • 1 white onion, chopped
  • 1 box (7.5 oz) yellow corn muffin mix
  • 1/2 tsp ground sage
  • 1 egg, beaten
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 tbsp vegetable oil
  • 1 lb. honey-roasted turkey breast, sliced
  • 2 (10 oz.) packages frozen mashed potatoes, thawed
  • 2 cups prepared turkey gravy
  • 3 tbsp grated parmesan cheese
  • For Cranberry Chutney:
  • 3 large Granny Smith Apples, peeled, cored and diced
  • 1/2 cup orange juice
  • 1/2 cup port wine
  • 1/2 cup cider vinegar
  • 1/2 cup fresh or frozen cranberries
  • 1/2 cup maple syrup
  • 1/2 tsp EACH salt and cinnamon

Method

1. Preheat oven to 375 degrees. 2. Place 12-inch cast-iron skillet over medium-high heat and melt 2 tbsp butter. Saute celery and onion in butter until soft, about 5 minutes. 3. In mixing bowl, place corn muffin mix, sage, egg, sour cream, milk and vegetable oil. Mix together; fold in sauteed vegetables. 4. Wipe bottom and sides of the cast-iron skillet with paper towels to clean. Lightly butter inside of skillet with a little more butter. 5. Lay turkey slices on bottom of cast iron skillet. Spread potatoes on top, next spread gravy on top of potatoes. Sprinkle with parmesan cheese and cover with the cornbread batter. 6. Place in hot oven to bake for 30-35 minutes or until golden brown. 7. For Chutney, place diced apples, orange juice, wine, vinegar and cranberries in saucepan. Heat to a boil, then reduce heat to low and simmer for 15-20 minutes. Stir in maple syrup, salt and cinnamon. Keep warm. 8. Remove skillet from oven and let sit for 8 minutes before slicing in pie-shaped wedges and serving. Place heaping tablespoon of cranberry chutney on top of each wedge.
