Easy and Healthy Turkey Cups

Refrigerated biscuit dough is used for these "cups" that are filled with cooked ground turkey, onion and bell pepper, and covered with a mixture of eggs, milk and cheese.
 

Ingredients

  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 1 clove garlic, chopped
  • 1/4 cup minced green bell pepper
  • 1 chopped meduim tomato
  • 1/4 tsp dried basil, crushed
  • 1 can refrigerated biscuit dough (12 biscuits)
  • 3 eggs, beaten
  • 3 tablespoons regular or soy milk
  • 2/3 cup shredded Jack cheese

Method

Preheat oven to 400 degrees. In a large nonstick skillet over medium-high heat, combine ground turkey, onion, garlic, and green pepper. Cook until turkey is evenly brown and onion is translucent. Remove from heat, stir in tomato and basil; set aside. Separate the dough into 12 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 12 muffin cups. Drain the turkey mixture. Evenly distribute the turkey mixture between the cups. Mix together the eggs and milk. Pour egg/milk mixture into the cups. Sprinkle tops with shredded cheese. Bake in preheated oven for 18 to 20 minutes or until filling sets.
