
Sprinkle large flour tortillas with cooked vegetables, top with cheddar or Jack cheese, and cook. Cut into wedges and serve with ranch dressing or salsa.
Lightly brown 1 side of each tortilla in wide non-stick skillet. Layer 1/4 of the veggies on the browned side of 4 of the tortillas. Place shredded cheese on top. Cover with another tortilla, browned side down. Fry in wide non-stick skillet till lightly browned & cheese is melted, turning once.
Cut into triangles with pizza cutter & offer Ranch dressing or salsa for dipping.
