Fall Beet Salad

Nothing says fall like a dark salad made with beets, broccoli, onion and sunflower seeds. The homemade vinaigrette adds a great fall flavor.
Ingredients
- 2 15 oz cans sliced beets, drained
- 1 medium red onion, thinly sliced
- 1 15 oz can mandarin oranges, drained
- 1 1/2 cup small broccoli florets
- 1/2 cup honey roasted sunflower seeds Dressing:
- 1 1/3 cup olive oil
- 1/2 cup vinegar
- 1 1/2 tsp spicy brown mustard
- 1 tbsp honey
- 1 clove garlic, minced

Method
In a large bowl, gently toss beets, onion, mandarin oranges, broccoli and sunflower seeds. Prepare dressing by whisking oil and vinegar in a small bowl, add remaining ingredients and whisk well. Add desired amount over salad. Turn salad out onto a platter and serve.
