Far East Potato Salad

A colorful mix of healthy fruit and vegetables tossed with a tangy Asian inspired dressing.

12 Small Red Potatoes
¼ cup Seasoned Rice Vinegar
2 Tbsp Sweet Asian Chili Sauce
½ tsp Ground Mustard
½ tsp Toasted Sesame Oil
⅓ cup Canola Oil
1 can Mandarin Oranges, drained reserving 2 tbsp juice
1 cup Snow Peas, blanched
4 Green Onions, sliced
8 Fresh Thai or Italian Basil Leaves, shredded


Cook potatoes in boiling, salted water until just tender, then drain. Transfer potatoes to a plate and let cool just enough to handle. Meanwhile, in a jar with a tight fitting lid, combine vinegar, chili sauce, mustard, sesame oil, canola oil and reserved mandarin orange juice. Shake well and set aside. Slice potatoes into bite-sized chunks. Place potatoes, oranges, snow peas and green onions in a serving bowl. Shake vinaigrette and drizzle just enough over potato mixture in bowl to coat, then gently toss. Sprinkle with basil.
