Farmers Breakfast Basket

"Baskets" are created with a base of fried potatoes, topped with scrambled eggs, then with bell peppers, and shredded cheese sprinkled on top.
 

Ingredients

  • 4 small red potatoes, cubed
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 (Vidalia) sweet onion
  • Oil or butter
  • 1 cup turkey ham, diced
  • 4 large eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Ketchup or bottled hot sauce

Method

Cook potatoes in a skillet in a small amount of oil until fork-tender; sprinkle with salt and pepper to taste. In a separate skillet cook peppers and onion in a little oil for 3 minutes, add turkey ham and cook 3 minutes more; remove from skillet. Scramble the eggs; salt and pepper to taste. To build your basket, place potatoes on a platter, then place scrambled eggs on top, then pepper mixture, then shredded cheese. Sprinkle with hot sauce or ketchup, if desired.

 

Notes: You may use butter or vegetable oil to cook potatoes and eggs.
