Feta-Waldorf Side

Cooked rice, herbed feta cheese, onion, celery, apple, golden raisins, and walnuts are combined in this side dish that's topped with buttered panko crumbs and baked to heat through.
Ingredients
- 6 cups cooked rice
- 6 ounces Herbed Feta cheese, crumbled
- 1/2 cup sweet onion, coarsely chopped
- 1/4 cup chopped celery
- 1 large tart apple, cored, peeled, and coarsely chopped
- 1/3 cup golden raisins
- 1/4 cup walnuts, coarsely chopped
- 2 tablespoons butter, melted
- 1/2 cup panko bread crumbs

Place cooked rice in large bowl. Stir in feta, onion, celery, apple, raisins and walnuts, tossing to blend. Spread in 2-quart buttered baking dish. In small bowl, combine butter and panko crumbs; sprinkle on top of casserole. Bake, uncovered about 10 minutes or until heated through.
Notes: Anyone that loves Waldorf salads will love the combination I came up with. The rice with the feta is terrific ~ along with all the other goodies! I hope you enjoy this side dish!
