Gluten and Sugar Free Lasagna


This heart healthy version of lasagna has broccoli, mashed black beans and dairy free cheese. I would say this is a healthy treat to be tried.



Ingredients:

  • 3 cans diced tomatoes, no sugar added
  • 3 cups minced cabbage, green or red
  • 3 cups minced broccoli
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 can black beans, mashed with water into a paste
  • 1 lb Italian sausage, sugar free
  • 1 egg
  • 3/4 cup quinoa flakes (quick oatmeal works too)
  • Rice lasagna noodles, cooked aldente
  • Nondairy cheese, jalapeno cheddar almond cheese

Method

Mix cabbage, broccoli, onion, garlic, beans and tomato juice from cans of diced tomatoes. Take 1/3 of that mix and fold in with sausage, egg, and quinoa flakes. Cook sausage mix until fully cooked. Preheat oven to 350 degrees. Cook sausage mixture on stovetop, until cooked all the way through but do not cover while cooking. In a 9x9 pan, layer 1 can tomatoes, a layer of noodles, a layer of vegetable mixture, a layer of cooked meat mixture, a layer of 1 can tomatoes, a layer of cheese, a layer of noodles, a layer of vegetable mixture, a layer of cooked meat mixture, a layer of 1 can tomatoes, and a layer of cheese. Cover with foil and place in oven for 1 hour. Uncover and broil for 1 minute.
