Grand Prize Belgian Endives

Endives served with caviar, sour cream and chives make this a grand prize winning side dish.
Ingredients
- 2 Belgian endives, cut in half horizontally
- 8 teaspoons sour cream
- 1 small jar black or red lump
- fish caviar
- 4 teaspoons snipped fresh chives

Rinse the endive halves and wipe dry. Place 2 teaspoons sour cream in the thick end of each half. Place 1/2 teaspoon sour cream on other end and dip each end into snipped chives. Arrange on individual serving plates as an accompaniment to entrees like baked potatoes or risotto rice.
