Green Rice


Hot cooked long grain rice is combined with green vegetables--bell pepper, parsley, and green onion tops. Cubes of Velveeta add a touch of yellow to the green rice as it bakes.



Ingredients:

  • 1/3 cup uncooked long grain rice    
  • 2/3 cup water    
  • 3/4 cup chopped green sweet pepper
  • 1/3 cup snipped fresh parsley
  • 1/4 cup chopped green onion tops    
  • 1 8-oz. package process cheese spread, cubed    
  • 1 beaten egg    
  • 1/4 cup milk

Method

In a small saucepan, stir together the rice and water. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or until rice is tender. In a medium bowl, stir together the cooked rice, sweet pepper, parsley, and green onion tops. Add cheese, egg, and milk. Stir until combined. Turn into a greased 1-quart casserole dish. Bake, uncovered, in a 350 degree F oven for 15 minutes; stir. Bake, uncovered, about 15 minutes more or until golden and bubbly around edges. Let stand 5 minutes before serving.
