Ham and Cheese Bake


Diced ham is combined with red onion, cheddar cheese, and sliced sweet potato in a pie plate. A thin batter of egg, milk and biscuit mix is poured over and baked.



Ingredients:

  • 2 cups cooked ham (diced)
  • 2 tablespoons thinly sliced red onion
  • 1 cup shredded cheddar cheese
  • 1/4 cup thinly sliced sweet potato or yam
  • 1 teaspoon butter
  • 2 eggs
  • 1/2 cup prepared baking mix (Bisquick)
  • 1 cup milk

Method

Preheat oven to 350 degrees F. Place sliced sweet potato and butter in a microwave-safe dish and cook for 1 minute. Spray a nine-inch pie plate with nonstick spray. Add ham, onion and sweet potato to pie dish; stir to combine ingredients. Sprinkle cheese on top. In a small bowl, stir eggs, milk and baking mix until just blended. Pour over the ham mixture. Bake at 350 degrees for 25 to 30 minutes.

Notes: Garnish with fresh sliced beef steak tomatoes, or add a fresh fruit salad with a yogurt dressing. Great for breakfast, lunch, or dinner.
