It takes a little extra effort to make the pineapple boats, but the presentation is worth it.
 

Ingredients

  • 1 3-oz. pkg. cook-and-serve vanilla pudding mix
  • 1 cup pineapple juice
  • 1 1/4 cups orange juice
  • 1 fresh pineapple
  • 1 cup cantaloupe balls
  • 1 cup strawberries, halved
  • 1 cup honeydew melon balls
  • 1 cup watermelon balls
  • 2 bananas, sliced
  • 1 cup seedless red grapes
  • 1 11-oz. can mandarin orange sections, drained
  • 1 kiwifruit, sliced

Method

In a saucepan combine the pineapple juice, pudding mix, and orange juice. Cook and stir until thick; remove from heat and let cool. Meanwhile, cut pineapple in half lengthwise through the green top. Loosen and remove the pineapple flesh from the shell; remove and discard core. Cut the pineapple into bite-size wedges. (Use 2 cups for this salad; cover and chill any remaining pineapple for another use.) Chill the pineapple shells. In a large bowl combine the pineapple wedges, cantaloupe, strawberries, honeydew melon, watermelon, bananas, grapes, mandarin oranges, and kiwifruit. Drizzle the cooled pudding mixture over the fruit; toss gently to coat. Cover and chill at least 1 hour. To serve, spoon fruit mixture into pineapple shells.

 

Notes: This makes a very colorful, pretty way to serve a fruit salad. You could add any other fruits you like and arrange on the tray if they don't fit in the pineapple shells.
