Healthy Pumpkin-Oat Bread

This healthy pumpkin quick bread contains no fat and uses artificial sweetener instead of sugar. It has both flour and rolled oats, and spices for flavor.
 

Ingredients

  • 1 1/3 Cup Flour
  • 1/2 Cup Quick-cooking rolled Oats
  • 1 Cup Splenda for baking (or other cup-for-cup sugar substitute)
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 Cup Unsweetened Applesauce
  • 1/2 Cup Egg Substitute (equivalent to 2 eggs)
  • 1 Cup Canned Pumpkin (not pumpkin pie mix)

Method

Preheat oven to 325 degrees. Spray a medium sized bread pan with cooking spray. In a large bowl, combine dry ingrediants (flour through nutmeg). Add applesauce, egg substitute, and pumpkin and mix until just combined. Pour into bread pan and bake for 40 minutes or until a toothpick comes out clean.

 

Notes: When using sugar subtitute, baking time and temperature is less than normal. If using regular sugar, increase temperature to 350 degrees or bake longer.
