Heavenly Hummus Pita Folds

This fresh summer sandwich is prepared with homemade hummus and fresh cucumber slices. The feta and onion add great flavor.

  • Servings: 4

Ingredients:

¼ cup Roasted Red Bell Peppers, drained
1× 16 oz can Chickpeas, drained and rinsed
¼ cup Extra Virgin Olive Oil
3 Tbsp Chopped Flat Leaf Parsley, divided
1 Large Clove Garlic
2½ Tbsp Fresh Lemon Juice
⅛ tsp Ground Cumin
¼ tsp Kosher Salt
¼ cup Slivered Kalamata Olives
¼ cup Coarsely Chopped Marinated Artichoke Hearts
4 Pocket Less Pita Bread Rounds, 7"es in diameter
1 Small Cucumber, peeled and thinly sliced
½ cup Crumbled Feta Cheese
2 slices Red Onion, separated into rings

Directions:

To make the hummus, combine the roasted peppers, chickpeas, olive oil, 2 tablespoons parsley, garlic, lemon juice, cumin, and salt in a blender, then puree until smooth. Transfer to a medium bowl, then mix in remaining parsley, olives, and artichokes. Spread hummus evenly on the pita rounds. Top one half of each pita evenly with cucumber slices, feta, and onion rings. Fold pita over the topped half and serve.
