Herbed Gruyere Potato Souffle

A light, savory dish perfect for an elegant dinner party with friends or a special family dinner.
Ingredients
- 3 eggs, separated
- 3 cups cool prepared mashed potatoes
- 1 teaspoon chicken bouillon paste
- 1/2 teaspoon freshly cracked pepper
- 2 green onions, thinly sliced
- 2 teaspoons minced garlic
- 2 tablespoons flour
- 1 1/2 cups shredded Gruyere cheese, divided
- 1/3 cup panko bread crumbs
- 2 tablespoons finely chopped fresh basil
- Whole basil leaves for garnish

Method
Preheat oven to 400 degrees. Grease a 2 quart baking dish. Beat egg whites until stiff. In a large bowl stir together potatoes, egg yolks, bouillon, pepper, onions, garlic, flour and 1 cup of the gruyere. Fold in egg whites and spoon into prepared dish. Combine remaining 1/2 cup gruyere, panko and chopped basil and sprinkle over potatoes. Bake 25 to 30 minutes or until edges are slightly puffed and topping is browned. Cool 5 minutes before serving. Garnish with basil leaves.
Notes: These potatoes are so delicious; you may opt to skip the main course. Cold leftover or purchased refrigerated potatoes may be used, just be sure to stir and soften well before adding the other ingredients.
