Homemade Tomato Sauce

A great use for the summer surplus of fresh tomatoes--a classic homemade marinara.
Ingredients
- 12 ripe tomatoes; peeled, cored and finely chopped
- 2/3 cup onion, minced
- 3 tbsp olive oil
- 1 1/2 tsp oregano
- 1 bay leaf
- 1 tbsp salt
- 12 tsp celery salt
- 1 tsp ground pepper
- 1/2 tsp chopped sweet red pepper
- 1 tsp sugar

Method
Lightly saute onion and garlic in olive oil, but do not brown. Add remaining ingredients, and cook over low heat, about 2 hours. Stir frequently to prevent sticking. Cool slightly and press through food mill to remove seeds, or leave as is.
Notes: This does not make that much sauce but is perfect for two. I add shrimp and serve over rice.
