Italian Couscous


Couscous is combined with broccoli, dried tomatoes, capers, and olives for a Mediterranean side dish.



Ingredients:

  • 1 1/2 c. plain couscous  
  • 1/4 c. olive oil  
  • 2 cloves peeled garlic (or 1/4 tsp. garlic powder)  
  • 1/2 tsp. salt  
  • red pepper flakes (optional)  
  • 1 large crown broccoli, chopped into bite-sized florets  
  • 1/2 c. sun-dried tomatoes packed in oil  
  • 1/4 c. capers, rinsed  
  • 1/4 c. sliced olives  

Method

Mash garlic with salt (or mix garlic powder and salt together) and add to olive oil. Allow to steep while cooking other ingredients. Cook couscous according to package directions. While couscous is sitting, steam broccoli until crisp/tender (about 4 minutes). Chop sun-dried tomatoes into smaller pieces, and mix with capers and olives. Combine tomato mixture with olive oil, and let rest for 5 minutes. Fluff couscous with a fork, and add to tomatoes, combining really well so the olive oil infuses with all the couscous. Add the steamed broccoli and mix again. Serve at room temperature or slightly warmer.

Notes: You can substitute olive oil or parmesan couscous equally well!
