Juliana's Super Protein Muffins

Protein powder and stevia powder from the health food store is used in these muffins, plus veggies, spice, yogurt, applesauce, dried fruit and nuts.
 

Ingredients

  • Wet:
  • 1 egg
  • 1/4 cup applesauce
  • 1/2 cup plain low-fat yogurt
  • 2 finely shredded carrots
  • 1 finely shredded zucchini
  • 1/4 cup canola oil
  • 1 cup dried cranberries, cherries, or raisins
  • Dry:
  • 1 cup protein powder
  • 1 cup flour (can use half white and half brown rice flour, or all white)
  • 1 cup chopped walnuts or pecans
  • 1/2 tsp baking soda
  • pinch of salt
  • 1 rounded tsp cinnamon
  • 1/3 cup sugar (or 1/2 tsp stevia powder)

Method

Mix dry ingredients in one bowl and wet in another. (Shred the zucchini onto a paper towel, and then squeeze out some of the moisture before adding to the mix.) Combine both wet and dry. If too dry, add a bit more yogurt. Spray oil (Pam) on paper muffin cups and place in muffin tin. Fill them with the batter and bake at 400 degrees for 20 to 25 minutes, or until a toothpick comes out clean.

 

Notes: Protein powder and stevia (a noncaloric natural sweetener) can be obtained from a health foods store. Well wrapped, the muffins can be frozen until needed. They also make a great dessert: place a warm muffin in a bowl of homemade applesauce and top with a bit of whipped cream. Better than pastry!
