
This quick soup combines lean ground beef or turkey (or soy crumbles) with frozen vegetables and pasta, canned vegetable juice and diced tomatoes.
Brown ground meat in large soup pot; add vegetable juice. Simmer till hot; add Tuscan vegetables. Cook until vegetables separate. Add vegetables with pasta shells and cook till separated. Add diced tomatoes; season with salt and pepper. Simmer 10 minutes.
Notes:
Serve with multigrain crackers; kids love this recipe.
