Lazy Lady Quiche

Refrigerated crescent roll dough forms the crust for this quiche, with an egg, vegetables, and turkey filling.
 

Ingredients

  • *1 tube refrigerated reduced-fat croissants
  • *8 large eggs or the equivelant amount of egg product
  • *4 slices reduced-fat turkey sandwich meat, cut up
  • *1 medium zucchini
  • *2 carrots
  • *1 bunch fresh broccoli
  • *1/4 cup grated parmesan cheese
  • *salt and pepper to taste

Method

*Spray a 9" by 9" pan with non-stick cooking spray *Unroll the croissants, (do not separate into triangles) line the bottom of the pan with the croissants. *Either grate or finely chop the zucchini and carrots. Finely chop the broccoli *In a large bowl, beat the eggs, add the vegetables, the cheese, the meat and the salt and pepper. *Pour egg mixture over the croissants. *Bake at 350 degrees about 1/2 hour or until the center is firm and a toothpick comes out clean.
