Lemon Quinoa and Toasted Flax Seeds

This is a very tasty version of quinoa. Makes a wonderful side dish.

⅓ cup Toasted Flax Seeds, see instructions below
1 cup Quinoa Cooked In Chicken Broth
1 Lemon, juice and zest
2 cups Chicken Broth
2 Tbsp Olive Oil
½ Small Onion, chopped
1 Large Garlic Clove, chopped
¼ cup Chopped Black Olives
3-4 Tbsp Chopped Fresh Parsley
Salt & Pepper, to taste
¼ cup Grated Cheese, optional


Preheat oven to 350 degrees. Place 1/3 cup flax seeds on cookie sheet. Bake for 4-5 minutes, stirring frequently. In medium saucepan, add quinoa, lemon juice and 2 cups of chicken broth, then stir. Cover and cook until all liquid has cooked out. In a large saute pan, heat olive oil on medium heat. Add onion and garlic, then cook until soft. Add black olives, parsley, lemon zest, salt and pepper, then stir. Add cooked quinoa and toasted flaxseed to saute pan and stir. Add grated cheese and stir.
