Light, Healthy After-a-Workout Breakfast

Bread cubes are dipped in egg, coated with ground sunflower seeds, and skillet toasted. The cubes are topped with a mixture of diced turkey breast and a crumbled vegetable "burger" patty that are flavored with steak sauce and garlic-chili paste. Asparagus, mushrooms and mozzarella cheese are spooned atop.
Ingredients
- 4 oz sunflower seeds, ground
- 2 slices whole wheat, whole grain or multi-grain bread, cut into cubes
- 1 egg, beaten with 1 Tbsp of water
- Nonstick cooking spray
- 4 oz diced cooked turkey breast
- 1 patty frozen vegetable burger patty, thawed and crumbled
- 2 Tbsp bold-and-spicy steak sauce
- 1-2 tsp garlic-chili paste
- 1 avocado, peeled and diced
- 1/2 lb. asparagus tips
- 1/4 lb sliced mushrooms
- 1/4 cup part-skim mozzarella cheese

Dip the cubes of bread in egg mixture to moisten. Coat cubes with ground sunflower seeds. Spray nonstick frying pan lightly with cooking spray. Saute bread cubes over medium heat. Stir frequently so cubes don't clump together. When nicely browned set the pan aside, uncovered, off heat. In a bowl, sprinkle the diced turkey and crumbled vegetable burger with steak sauce and the garlic-chili paste. Add diced avocado, asparagus tips and sliced mushrooms. Spoon bread cubes on a serving plate and top with the vegetables, sprinkle with mozzarella and serve.
