
Mashed potatoes mixed with a colorful assortment of vegys plus rich sour cream and butter--great comfort food.
Cut potatoes and carrots into large chunks and cook in salted boiling water until fork tender. While potatoes are cooking slice onion into thin slices and remove corn from cob with a sharp knife. Heat oil in a large frying pan and add onions, corn, 1/2 tsp salt and 1/4 tsp pepper.
Saute until onions are caramelized and corn is tender. When potatoes and carrots are done, drain and add back to hot pot. Add butter, sour cream, and remaining salt and pepper. Mash with an electric mixer or potato masher. Add onions and corn and toss together. Transfer to a serving bowl and garnish with fresh parsley if desired.
