Mediterranean Rice Salad with Cilantro-Lime

Cooked white or brown rice, olives, raisins, feta cheese, onion, cucumber, tomato and pine nuts are tossed with a honey, Dijon, lime and cilantro dressing.

  • Servings: 4-6


3 cups Cooked White or Brown Rice
½ cup Pitted Kalamata Olives, halved
¼ cup Golden Raisins
½ cup Feta Cheese, crumbled
1 Red Onion, small dice
1 English Cucumber, small dice
1 Large Tomato, seeded and diced
¼ cup Pine Nuts, toasted
1 Tbsp Cilantro
1 Tbsp Basil
1 Tbsp Mint
Zest of 2 Limes, divided
½ cup Fresh Lime Juice, divided
1 Tbsp Dijon Mustard
1 Tbsp Honey
1 bunch Cilantro, leaves only
¼ cup Olive Oil


In a large bowl, combine rice, olives, raisins, feta, onion, cucumber, tomato, pine nuts, herbs, zest of 1 lime and 1/4 cup lime juice. Mix well to combine. Adjust seasoning with salt and pepper. In a food processor or blender, add remaining lime juice and zest, Dijon, honey and cilantro. Pulse until cilantro is finely chopped. Drizzle in olive oil. Add to salad in bowl and mix well. Adjust seasoning with salt and pepper. Serve immediately.
