Rice, sun-dried tomatoes, feta cheese, chickpeas and artichoke hearts combined with an olive tapenade for this light, Mediterranean inspired side dish.

  • Servings: 6


2 cups Cooked Long Grain White Rice
¼ cup Diced Sun-dried Tomatoes In Olive Oil
¼ cup Feta Cheese
¼ cup Olive Tapenade
¼ cup Diced Shallots
2 Tbsp Chopped Fresh Basil
¼ cup Chickpeas
¼ cup Diced Marinated Artichoke Hearts
1 tsp Greek Seasoning Spice Blend
Salt, to taste
Pepper, to taste


Combine all ingredients together in a bowl and cover with plastic wrap. Place in refrigerator for at least 30 minutes. Serve cold.
