Mighty Easy Meatloaf

This meatloaf mixture is not only easy, but healthy, too. It's made with ground turkey, salsa, egg, onion and dry bread crumbs.
Ingredients
- 1 lb ground turkey
- 1/2 cup seasoned fine dry bread crumbs
- 1 medium onion, chopped
- 1 egg, beaten
- 1/2 cup "medium or hot" salsa

Method
Thaw turkey, if frozen. Combine all ingredients in a large bowl. Shape into a meatloaf in a baking pan; add a little bit of water to the pan. Bake in a medium (350 degree) oven for 50-60 minutes or until done.
Notes: This is very low fat, low carb and simple to prepare. It uses ingredients ingredients easily kept in the house.
