Miracle Low-fat Chicken Salad

This chicken salad combines grilled, shredded chicken breasts with chopped apple, celery, red sweet pepper, Miracle Whip salad dressing and barbecue sauce.
 

Ingredients

  • 2 stalks celery, chopped
  • 1 Granny Smith apple, peeled and chopped
  • 1 Red Bell Pepper, chopped
  • 3 large chicken breasts, skinned and boned
  • 6-8 tablespoons Fat-Free Miracle Whip
  • 2 tablespoons barbeque sauce

Method

Combine chopped vegetables and apple in medium bowl. Fill the bowl with cold water; set aside in fridge. Grill chicken (A George Foreman Grill works great.) Shred chicken with a fork and knife. Drain off water well from the apple and vegetable mixture. Combine chicken and apple-vegetable mixture in a large bowl. Fold in Miracle Whip and BBQ sauce. Mix until everything is coated.

 

Notes: Great for sandwiches, wraps, or salads. Try it on an English muffin!
