Mixed Vegetables in Curried Coconut Sauce

This dish is a great way to introduce a new flavor with vegetables and also makes a great vegetarian dish.
 

Ingredients

  • 1 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 cup chopped red onions
  • 1 tbsp crushed garlic
  • 1 cup frozen pea carrot mix
  • 1 cup frozen French cut beans
  • 1 cup frozen lima beans
  • 1 tbsp curry powder
  • 2 cups coconut milk
  • 1/2 tsp turmeric powder
  • 1 tsp freshly grated nutmeg
  • 1 cup plain yogurt
  • Salt to taste
  • 1 cup chopped cilantro
  • 1 cup roasted cashew nuts

Method

Heat oil in heavy sauce pan, over medium, heat for about a minute. Pop mustard seeds in hot oil, about a minute. Saute onion until onion gets soft, about 3-4 minutes. Add garlic and vegetables; continue cooking over medium heat with sauce pan covered, about 10 minutes. Stir in curry powder. Add 2 cups water and coconut milk; bring it to boil over medium heat, about 6-8 minutes. Stir in turmeric powder and nutmeg. Turn heat off and cool to room temperature. Add yogurt and salt to taste. Garnish with cilantro and cashews. Serve at room temperature.

 

Notes: Serve this tasty nutritious dish with rice, flat bread or simply by itself.
